Red Velvet Banana Bread

Ingredients
Banana Bread:
- 1¼ cup sugar
- ½ cup (1 stick) unsalted butter at room temperature
- 2 eggs
- 3 ripe bananas
- ½ cup milk
- 1 tsp vanilla extract
- 2½ cup all-purpose flour
- ½ cup cocoa powder
- 1 tsp baking soda
- 1 tsp salt
- 2 tsp red food coloring
Cream Cheese Frosting:
- 4 oz cream cheese, soften
- 2 tbsp unsalted butter, room temperature
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Pre-heat the oven to 350 degrees and line a 9 x 5 inch loaf pan with parchment paper.
- In the bowl of an electric mixer, beat sugar and butter until fluffy. Add the eggs and mix until combined.
- Mash bananas with a fork, and add to the mixing bowl. Pour in the milk and vanilla, and then mix until combined.
- In a small bowl, combine the flour, cocoa powder, baking soda and salt. Slowly pour into the wet mixture with the mixer on low speed.
- Add in the red food coloring and mix until combined.
- Pour the batter into the prepared pan and bake for one hour.
- While the bread bakes, make the frosting by combining all of the ingredients in the bowl of electric mixer. Mix until combined and smooth.
- Spread frosting over completely cooled bread before serving.
