Banana Ice Cream 5 Ways

Ingredients

  • 2 bananas
  • 1/4 cup coconut milk

Instructions

  1. Peel bananas and slice into 1-inch pieces. Place on a cookie sheet and freeze for at least 2 hours.
  2. Place frozen banana pieces in a food processor with the coconut milk and let it run for about 2 minutes, stopping to scrape down the sides as needed. When it’s done, the mixture will be smooth and creamy with the consistency of soft serve.
  3. Transfer to a freezer safe container and freeze for at least 1 hour before serving.

 

Flavor Options:

 

  • Strawberry Banana: Roughly chop 5 frozen strawberries and add them to the food processor with the frozen bananas pieces.

 

  • Mint Chip: Roughly chop 6 fresh mint leaves and add them to the food processor with the frozen bananas pieces. When the mixture is smooth, stir in 1/2 cup of chocolate chips.

 

  • Chocolate: Add 1 tbsp cocoa powder to the food processor with the frozen bananas pieces.

 

  • Pineapple: Add 1/4 cup frozen pineapple chunks to the food processor with the frozen bananas pieces.

 

  • Caramel Marshmallow Swirl: When the banana mixture is smooth, stir in 1/4 cup mini marshmallows and 2 tbsp. caramel sauce before transferring to a freezer safe container.
